GENUGEL® Carrageenan CG-130 is Kappa a carrageenan. It is anionic water-soluble biopolymer that forms a firm brittle gel when a solution is cooled that is transparent and thermally reversible. The gel strength and syneresis are influenced by the concentration of carrageenan and by the type and concentration of added salts. Gel texture can be modified by the incorporation of locust bean gum.
