Formulation challenges
- Heat-stable structure. Fats melt, emulsions break, gels weep, chocolate blooms. Higher-melting fats, more thermally stable hydrocolloids and engineered emulsions are needed to hold structure at 30°C and above.
- Microbial safety under stress. Cold-chain breaks accelerate spoilage. Water-activity reduction, pH control, natural preservation systems and packaging interventions all become more important.
- Ingredient supply variability. Climate disrupts crop yields and quality. We need wider tolerance bands and the ability to swap ingredient sources without changing the consumer-facing experience.
