Formulation challenges
- Recreating animal-protein behaviours. Milk proteins gel, melt and brown in ways plant proteins don't naturally replicate. Combinations of legume proteins, hydrocolloids and fats are needed.
- Maintaining gel and melt in dairy-free formats. Plant-based cheese and desserts need gelation systems that behave like casein or gelatin — soft, springy, sliceable — without animal-derived ingredients.
- Gluten-free dough handling. Gluten gives dough elasticity and gas retention. Replacement systems (clean-label starches, hydrocolloids) deliver different but increasingly competitive sensory outcomes.
Opportunity for innovators
Stop benchmarking against the original. The most successful mimicry products eventually outgrow the comparison — Violife isn't sold as 'like cheese', it's its own category. Build for that future.
