Tate & Lyle's latest report takes an in depth look at the European ice cream market, with a focus on the move to create healthier versions of kids’ favourites.
Did you know that over 50% of the children in the UK and Germany eat ice cream daily or at least twice a week?* Ice cream is an indulgent treat but it’s high in fat and sugar, so parents welcome healthier versions that still feel like a treat, but don’t contribute to diseases associated with high consumption of free sugars such as obesity or tooth decay. In Europe, one in three children is overweight or obese**. In the current market for example in Germany, a daily serving of ice cream may contribute to 60% to 75% of kids’ recommended sugar daily intake.
Creating sugar and fat reduced ice cream is technically challenging as fat and sugar contribute so much to the taste and profile and appeal.

PROMITOR® Soluble Fibre , the ideal soluble fibre for healthier ice cream
No compromise on sensorial attributes of ice cream
Tate & Lyle scientists have determined that PROMITOR ® 85 can be effective at lowering sugar or fat by up to 50% in ice cream without compromising the sensory attributes. PROMITOR® 85 helps build back a creamy & smooth mouthfeel, soft texture , and maintains ice cream stability. It also has minimal impact on taste & colour.
In dairy ice creams with fruit ripples and sauces, no need to “overdose” and no risk of hydrolysis of sugars over shelf life, given its excellent stability in high heat, high shear and at low pH.

Best fibre for little tummies and teeth
Ensure ice cream repeat purchase thanks to outstanding digestion tolerance: Tate & Lyle demonstrated that consumption of PROMITOR ® (3 8g/d for 10 days) was tolerated in children aged 3-9. Compared to 6g/d of inulin, 6g/d of PROMITOR® Soluble Fibre resulted in lower gas severity in children 3-5 years old.
