The trend & inspiration

What’s the origin of meatballs? Some say that meatballs first originated in China and were inspired by mochi. Others say that meatballs were introduced by the Dutch to Indonesia. But there is one fact that we can all agree on: Indonesian meatballs, also known as bakso, are an integral part of the local cuisine. From traditional street food carts to neighborhood stalls and restaurants, bakso is a favorite on the menu. From ready-to-eat dishes to a warm bowl of noodles, you can now offer your consumers the opportunity to make those delightful dishes from the comfort of home with the Bouncy Beef Bakso (BBB).

Azelis solution

Bouncy and juicy, we recreated the authentic homey bakso using a mix of beef and chicken meat. In this recipe, we focused on adjusting the texture while reducing the amount of meat used to increase yield and decrease cost-of-production. This exercise's hardest part was creating a round, smooth ball with a fibrous and juicy bite. It also had to impart good reheating properties with excellent hold and flavor preservation. From the sensory profile, stability to the ease of warming up… we've got everything covered!

The ingredients that made it happen

Bouncy & juicy structure:
  • Novapro® Collagen Fiber: clean label ingredient that can replace up to 5% of meat with 1% of Novapro® Collagen Fiber without losing nutritional benefits. Also improves the mouthfeel and texture and imparts fat retention in chilled processed meat.
  • Native Potato Starch: starch to replace part of the meat, improve body, binding and bounciness of the meatball.
  • Textur-Bind Kena 400: a specialty phosphate which serves as an excellent binder for food mixtures. Together with Native Potato Starch, it helps retain moisture for a better mouthfeel and extra juiciness.

Better stability and shelf life:

  • Opti.Form® Ace S50: a naturally-derived acidulant with preservative properties consisting of a powder blend of sodium lactate and sodium acetate and is specially-developed for meat & processed meat. In addition to potassium sorbate, it helps preserve meat and extend shelf life when exposed to short intervals of temperature abuse.
