Combined with Vertis™ CanolaPRO® I90+, a highly soluble canola protein isolate which enhances binding and emulsification, it delivers a smooth, soft crumb and consistent texture. Together, these plant proteins create a balanced protein profile while maintaining the cookie’s tender bite. Trehalose provides gentle sweetness at 45% of sugar’s intensity, helps retain moisture, and stabilises flavour and texture without unwanted Maillard browning, ensuring the cookie stays soft and chewy even with reduced sugar.

Finally, LAC-Shield, a heat- and pH-stable postbiotic, provides immune-supporting benefits and is ideally suited for incorporation into baked goods without compromising taste or texture.
