40% reduced sugar fortified choco milk

Challenge

Flavoured milk drinks are popular in Asia, particularly among children. However, the regular intake of high-sugar milk drinks raises health concerns. To tackle this issue, we have reformulated our chocolate-flavoured milk, reducing sugar content by 40% while enriching it with 5% protein and 3.5% fiber, all without compromising on taste. It’s the ideal indulgent drink to kickstart your day with a boost of fiber!

Azelis solutions:

In selecting protein and fiber sources, we focused on their viscosity and water solubility. Incorporating Orafti® GR and Orafti® HSI allowed us to easily boost fiber content, as both are highly water-soluble, enhancing the drink's creaminess and sweetness. To optimize mouthfeel, we added Genuvisco® Carrageenan JD-S and KELCOGEL® HMB[N], which also stabilise the cocoa powder, preventing sedimentation. The result is a stable drink with excellent suspension, a smooth texture, and improved flavour release.

Hero ingredients

GENUVISCO® Carrageenan JD-S: speciality carrageenan used to improve the mouthfeel of dairy and non-dairy beverages. It provides a rich, creamy texture without excessively increasing viscosity, making it ideal for milk-based drinks like flavoured milk and shakes.

KELCOGEL® HMBN: speciality gellan gum that serves as a suspension agent, ensuring that particulate matter, such as cocoa and coffee powders, remains evenly distributed throughout the beverage, preventing sedimentation and ensuring consistent texture.

Prebiotic fiber: highly soluble prebiotic fiber, enhancing the nutritional value of the product without affecting the texture or viscosity of the milkshake.

Stevia: a high-intensity, plant-based sweetener that replaces sugar without the calories. Offers clean sweetness and works in synergy with chocolate flavour to achieve a balanced, sugar-like taste profile.
